Home roasting adalah frontier terakhir kopi enthusiast. Kontrol penuh dari green bean sampai cup. Tapi butuh investasi waktu + mesin + learning curve steep. Panduan ini breakdown tier equipment + prinsip fundamental.

Kenapa TIDAK Home Roast

  • Learning curve — 20-50 batch sebelum bisa cupping-acceptable
  • Smoke — mayoritas rumah Indonesia tidak punya extractor fan industrial
  • Chaff — biji lapisan kulit terluar beterbangan saat roasting
  • Konsistensi — beli specialty roaster lokal selalu lebih konsisten

Prinsip Fundamental

Fase Roasting

  1. Drying (0-5 menit) — biji hijau → kuning. Suhu 100-160°C. Uap keluar.
  2. Maillard / browning (5-8 menit) — kuning → coklat muda. 160-196°C. Flavor development start.
  3. First Crack (196-205°C) — bunyi "pop" biji ekspansi. Masuk teritori drinkable.
  4. Development (1-2 menit post-FC untuk light, 2-3 untuk medium, 4+ untuk dark)
  5. Second Crack (224-230°C) — kalau mau dark roast
  6. Cooling — stop roast dengan turunkan suhu cepat (<2 menit ke suhu ruang)

Variabel Kontrol

  • Charge temp — suhu drum saat masukkan green bean
  • Heat application — gas flame / electric element intensity
  • Airflow — exhaust rate (pengaruh flavor development)
  • Roast time — total 10-14 menit umum
  • Development Time Ratio (DTR) — %waktu post-FC / total (target 18-25%)

Tier 1 — Air Popper Hack (Rp 500-850k)

Cons:

  • Volt 110V US — butuh stepdown Rp 200k

Workflow:

  1. Letakkan 60-80g green bean di chamber
  2. Nyalakan, listen FC sekitar 4-5 menit
  3. Stop saat warna coklat medium + 1-2 menit post-FC
  4. Pindahkan ke metal colander 2 buah, shake + fan untuk cooling
